The Italian authentic flavors can be described in many interesting ways. Here is a nice recipe for a dish that might look complicated, but when you read through the recipe you will realize that if you don’t let the long list intimidate you, cooking a gourmet meal is kids’ play. Now, look at this squid ink pasta with prawns straight in its fishy eyes and say “We are going to cook you up and you are going to be delicious”.

Ingredients (for 4 servings):
1 pound of squid ink pasta
12 peeled and deveined medium-sized tiger prawns
1/2 cup of white wine
1/4 cup of cream
1/4 cup of lemon juice
4 tablespoons of torn parsley
1 tablespoon of mint leaves
1 finely diced red chili
2 large shallots, chopped
2 garlic cloves, coarsely chopped
White truffle oil
Salt and pepper
How to make the squid ink pasta with prawns:
Boil water in a large pot. When boiling, add the pasta and cook with salt and olive oil until al dente – firm yet tender. The package of the pasta should have cooking instructions, including cooking time. If not, taste the pasta to see if it is ready. Drain the pasta and set aside.
Heat some olive oil in a large pan and fry lightly the shallots and garlic with a pinch of salt, pepper, and nutmeg. When the pan is hot and the shallots start to soften, add the prawns and cook for about a minute. Add the chili pepper and lemon juice and stir before pouring in the white wine and the cream.
Add the parsley, the mint leaves, and the drained pasta to the pan and toss it until all the sauce is combined. Just before serving, drizzle 2 tablespoons of truffle oil.
