A special treat for the zombies in your party. Wouldn’t you just love to smarten up with one of these little marzipan brains?
¾ cup of almond flour
¾ cup of powdered sugar
½ teaspoon of rose water
1 egg white
5 drops of pink food coloring
1 teaspoon of almonds extract
Cookies of your choice
How to make the marzipan brains:
Pulse the almond flour and powdered sugar in a food processor until they are well combined and all lumps are gone. Mix the food coloring with the rose water and almonds extract before adding to the food processor. Keep pulsing until combined. Add the egg white and process until you get a smooth thick dough. Take the dough out of the food processor and knead a little to form a log. Wrap in plastic and refrigerate for about an hour.
Start forming the brain shapes by taking teaspoon amounts of marzipan and shaping it to little oval balls. For the brain’s folds, pinch a little marzipan and roll it to long thin worms. Press the little worms to the sides of the balls, assembling the folds of the brain with wavy patterns.
Brush a little corn syrup on the top side of the cookies to help to glue the brains.
